An apiary is a dedicated space for beekeeping, where honeybees are nurtured to produce pure, high-quality honey. Here, beekeepers harvest different varieties of honey, influenced by the surrounding flora, while also supporting pollination and biodiversity. Visiting an apiary offers a fascinating glimpse into the world of bees and honey production.
-
A honey tasting is a sensory journey through different varieties of honey, each reflecting the unique floral landscapes where bees collect nectar. From delicate wildflower honey to bold chestnut flavors, this experience highlights the richness, texture, and aromas of artisanal honey while unveiling the secrets of traditional beekeeping.
-
A wild and untamed region in central Sardinia, Barbagia is known for its rugged mountains, ancient traditions, and deep-rooted pastoral culture. Home to charming villages, prehistoric Nuragic sites, and rich culinary heritage, this authentic heart of Sardinia offers a glimpse into the island’s most ancient and unspoiled landscapes.
-
Cheese making is the process of transforming milk into cheese. It involves curdling the milk to create solids (curds), draining the liquid (whey), and often maturing the curds under specific conditions. This process can vary widely to produce different types of cheeses across cultures worldwide.
-
Nestled in the heart of Sardinia, Oddoene Valley is a lush, fertile region known for its vineyards, olive groves, and rugged natural beauty. Surrounded by limestone cliffs and pristine rivers, this hidden gem offers a glimpse into Sardinia’s rural charm, making it a paradise for wine lovers, hikers, and nature enthusiasts.
Tour description
There is a version of Sardinia that has nothing to do with the coast. It lives further inland — in the fragrant countryside around an apiary, in the cool stone interior of a farmstead, in the rows of vines that stretch across the Oddoene Valley at the end of a long, golden afternoon. This private full-day food experience is built around exactly that version of the island.
Collected from your accommodation by private transfer, the day unfolds across three distinct worlds, each defined by a different flavour and a different encounter with the people who produce it.
The first stop is a family-run apiary, where the air carries the sweetness of wildflowers and the hum of thousands of bees. Here, the ancient craft of Sardinian beekeeping is explained from the inside — the relationship between landscape, season and hive, and how each variety of local honey reflects a particular corner of this island. The tasting that follows is a genuine education in flavour: delicate, complex and unlike anything found on a supermarket shelf.
From the apiary, the route crosses into Barbagia — the rugged, tradition-rich heart of Sardinia — where a family-run farmstead becomes the setting for a hands-on cheese making experience. You watch and participate as fresh milk is transformed into wheels of Sardinian pecorino, following gestures that have been passed between generations for centuries. The cheese tasting that follows, paired with local bread and preserves, is as satisfying as it is illuminating.
The day draws to a close in the Oddoene Valley, a landscape of vineyards and granite cliffs that seems almost too beautiful to be real. At a local winery, a private guided wine tasting introduces you to the bold reds and aromatic whites produced from Sardinia's indigenous grape varieties — wines that carry the character of this specific soil, this specific sun.
Lunch is included, as are all tastings, your private guide and door-to-door transfers for guests staying in the North East of the island.
